Tuna Burger with Wasabi Mayo


  • 6 oz Red Ahi Tuna Steak
  • 1 tsp corn starch
  • 1 tsp ground ginger
  • 3 tbsp soy sauce
  • 1 tbsp mayonnaise
  • ¼ tsp wasabi powder
  • ¹/8  tsp green leaf lettuce
  • 1 tbsp white wine vinegar
  • 2 tbsp carrot
  • 1 hamburger bun


Julienne the carrots and place in a bowl. Add the vinegar and refrigerate 1 hour. Dice the tuna very small and place in a cold bowl. Add the cornstarch and ground ginger. Form into a burger on a hot griddle and add soy sauce. Sear the burger to rare- medium-rare. Mix the mayo with the wasabi paste. Slather the paste on the bun. Place the lettuce on the bottom and top with the burger. Top with carrots.
