
Surimi Ceviche
Ingredients
- 3 c Hidden Bay Flake and Chunk Surimi
- ¾ c red onion, diced
- ½ c cilantro, chopped
- ¼ c jalapeno, diced small
- 2 c roma tomatoes
- ¼ c olive oil
- ½ c lime juice
- 1 tsp ground cumin
- 1 tsp ground chipotle pepper
- 2 c guacamole
Preparation
Combine surimi with all ingredients except guacamole. Place in an air-tight container and store in the refrigerator for at least 4 hours. Serve surimi over guacamole with chips.
