
Shrimp & Waffles with Cajun-Mustard-Maple Glaze
Ingredients
- 8 oz HIDDEN BAY® Shrimp Breaded Hand Oriental Butterfly 26-30 Clean Tail, Individually Quick Frozen
- 1 ea Waffle Belgian 2.4 Ounce 4", Frozen
- 1 oz Tomato Grape Medley, Fresh
- 1 oz Corn Whole Kernel Grade A, Individually Quick Frozen
- 1/2 oz Onion Green Scallion Iceless Clean and Trim, Fresh
- 1/8 oz Seasoning Cajun
- 1/4 ea Mustard Dijon
- 1/2 oz Onion Green Scallion Iceless Clean and Trim, Fresh
- 1 oz Syrup Pancake Maple Flavored
Preparation
- Prepare shrimp in deep fryer until golden brown and cooked through.
- Toast waffle in sauce pan.
- Heat maple syrup, Cajun seasoning and mustard until smooth and blended.
- Heat a sauté pan with a touch of butter and add halved tomatoes and corn.
- Sear until browned edges — careful not to overcook — and season with salt & pepper.
- Add sliced green onions.
- Place shrimp on top of waffle and top with tomato/corn mixture.
- Drizzle with syrup sauce and serve.
