
Mole Verde
Ingredients
- 1 oz Base Chicken Gourmet Paste
- 18 oz Tomatillo Fresh
- 1/8 oz Bay Leave Whole Sweet Bulk
- 3 oz Seed Pumpkin Shell Off Raw Unsalted Sprouted Organic Dry
- 2 oz Sesame Seed Whole Hulled White
- 2 oz Pepper Jalapeno Chili Fresh, Diced
- 1 oz Garlic Whole Peeled Reclosable Bag 100-130 Cnt/lb Fresh
- 2 oz Onion Yellow Jumbo Bag Fresh, Diced
- 3 oz Lettuce Romaine Chopped Fresh
- 1/4 oz Cilantro, Chopped
- 6 oz Squash Zucchini Fancy/Medium Fresh, Chopped
Preparation
- Cut up the tomatillos and place in a sauce pan.
- Turn on medium high heat and cook for approximately 3 minutes, stirring occasionally.
- Add 2 cups of water and the chicken base.
- Cook for another 5 minutes or until the tomatillos are tender.
- Add the tomatillos and chicken stock to a blender.
- Add the rest of the ingredients and puree. Season with salt.
- Serve over any pork or poultry dish.
