
Lamb on the Run
Ingredients
- 4 oz ground lamb
- 1 oz arugula
- 2 oz Roma tomato, fresh
- 1/8 oz garlic, chopped
- 1/4 oz cumin seed, ground
- 1/8 oz oregano, ground
- 1/8 oz allspice, ground
- 1/4 oz smoked paprika, ground
- 1 ea hard roll four-inch, sliced
- 2 oz red onion, sliced whole ring
- SUB-RECIPE for Pistachio Tzatziki (one serving)
- 1 2/3 oz pistachio nut, raw
- 1/2 ea English cucumber, seedless
- 1/4 oz mint, fresh
- 1/8 oz baby dill, fresh
- 8 oz Greek yogurt, non-fat plain
- 1 oz Feta cheese, crumbled
- 1 1/2 oz lemon juice
Preparation
- In a bowl, combine lamb and all seasonings; mix well.
- Grill lamb burger to desire doneness.
- Toast the roll, then place arugula on bottom of roll.
- Place Roma tomato and red onions on top of arugula.
- Top with lamb burger and pistachio tzatziki.
