
Korean Sliders
Ingredients
- 196 ounces beef short ribs
- 8 ounces steak seasoning
- 12 ounces red onion
- 64 ounces beef broth
- 64 ounces Burgundy cooking wine
- 4 ounces whole bay leaf
- 6 ounces fresh garlic
Short Rib Slider
- 3 count brioche slider buns
- 1 ounce kimchi
- 2 ounces green scallion, chopped
Kalbi Sauce
- 20 ounces soy sauce
- 20 ounces light brown sugar
- 20 ounces water
- 4 ounces garlic, chopped
- 10 ounces green scallion, chopped
- 4 ounces sesame oil
Gochujang Aioli
- 48 ounces heavy-duty mayonnaise
- 1.5 ounces Gochujang hot pepper paste
Preparation
- Mix to incorporate. Store in a tightly covered container.
- Oil buns and place down on a flat top grill. Place 6 oz. of short rib on the grill and pour 1 ounce of kalbi sauce onto meat and mix. Take buns off the grill and add 2 ounces of meat on the bottom bun. To plate, add 1 ounce of kimchi, 1 ounce green scallion, and 1 ounce gochujang mayonnaise. Add top bun and skewer to serve.
