
Ham, Egg & Potato Pancakes
Ingredients
- 12 oz BOUNTIFUL HARVEST Shredded Hash Browns
- 1⁄4 c liquid whole egg mix
- 2 oz baked ham, diced
- 1 tbsp Parmesan cheese, shredded
- salt and pepper, to taste
- 3 tbsp matzo meal
Preparation
- In a mixing bowl, combine hash browns, eggs, ham, cheese, salt and pepper.
- Mix well.
- Add matzo meal to absorb excess liquid.
- Form into 3 pancakes and place on 350°F flattop grill.
- Cook 4-5 minutes on each side until golden brown.
- Serve immediately.
