
Greek Style Mussels
Ingredients
- 16 oz Hidden Bay® Mussel, In Shell
- 2 oz Extra Virgin Olive Oil
- 2 oz Yellow Banana Pepper Mild, Crinkle Cut Rings
- 2 oz Feta Cheese Crumbles
- 1 oz Oregano Leaves
- 4 oz Fire Roasted Tomatoes, Diced In Juice
Preparation
- Heat oil in saute pan. Add mussels (from frozen) and heat for 5-8 minutes. Add tomatoes and reduce to a simmer. Continue for about 3 minutes. Add oregano and banana peppers, place in bowl and garnish with feta.
