
Catfish Fritters
Ingredients
- 1 Tbsp Oil
- 1 Red Bell Pepper, small dice
- 1 Yellow Onion, small dice
- 2 Garlic Cloves, minced
- 2 Green Onions, minced
- 1 Egg, beaten
- ½ C Buttermilk
- 10 oz Boneless Catfish Filet, grilled, then flaked
- 1 C All-Purpose Flour
- 2 tsp Baking Powder
- ¼ tsp Salt
- ½ tsp Black Pepper
- 2 tsp Hot Sauce
- Vegetable Oil, for frying
Green Tomato Relish
- 1 C Green Tomato, chopped
- ¼ C White Onion, chopped
- ¼ C Green Bell Pepper, chopped
- ¼ C Red Bell Pepper, chopped
- 2 tsp Salt
- 2 tsp Black Pepper
- ¼ C White Sugar
- 1 tsp Mustard Seed
- ½ C Rice Vinegar
Preparation
- Combine all relish ingredients in a pot and simmer for 20 minutes.
- Heat oil in skillet and saute the red pepper, onions, garlic and green onions for 2 minutes. Allow the vegetables to cool. Combine the vegetables in a bowl and add egg, buttermilk, and flaked catfish. Combine the flour and baking powder and add it to the fish mixture. Season the fish with salt, pepper and hot sauce. Heat deep fry oil to 350 degrees.
- Carefully drop the fish batter by tablespoons into the hot oil for about 2 minutes per side or until golden brown. Drain on paper towels and serve with green tomato relish.
