Tex-Med Lamb Tacos

Tex-Med Lamb Tacos

Ingredients

  • 2 ea flour tortillas, pressed
  • 6 oz ground lamb
  • 2 oz red onion, chopped
  • 2 oz garlic, chopped 
  • 1/8 oz oregano leaves, whole
  • 1 oz olive oil
  • 1/8 oz ground coriander
  • 1/8 oz ground cumin
  • 4 oz hummus
  • 1 oz lettuce, shredded
  • 3 oz pico de gallo 
  • 2 oz cotija cheese

Preparation

  1. In a medium-high sauté pan, add olive oil, chopped red onions, garlic and ground lamb, then add seasoning and cook until done six minutes to 10 minutes.
  2. Set aside. Warm flour tortillas, fill with hummus, then add ground lamb, topped with lettuce. Finish with pico de gallo and cotija.
