- 6 c Bountiful Harvest® diced potatoes (RFS# 10854)
- 1 dozen Fair Meadow® eggs (RFS# L3370)
- 3 c Culinary Secrets® fajita blend vegetables (RFS# 57798)
- 6 oz shredded cheddar (RFS# 71240) or pepper-jack cheese (RFS# 70926)
- Cholula® sauce (RFS# 11558)
- CCP: Fry diced potatoes on a heated pan or flat top grill until potatoes are brown and have reached a minimum internal temperature of 135°F.
- CCP: Scramble eggs and cook until a minimum internal temperature of 145°F has been reached.
- Steam vegetables according to package directions.
- Layer one cup of fried potatoes, #8 scoop of scrambled eggs, and 3 oz spoodle of mixed vegetables in each bowl. Top with with shredded cheddar (RFS# 71240) or pepper-jack cheese (RFS# 70926) and serve with Cholula® sauce as desired.
