
Tennessee Chow Chow
Ingredients
- 2 cups Green Peppers, diced
- 2 cups Red Peppers, diced
- 2 cups Green Tomatoes, diced
- 2 cups Sweet Onions, diced
- 2 cups Green Cabbage, diced
- 1 tablespoon Kosher Salt
- 1 cup Sugar
- ½ cup Apple Cider Vinegar
- ¼ cup Water
- ¾ teaspoon Mustard Seed
- ¾ teaspoon Dry Mustard
- 1 tablespoon Crushed Red Pepper
- ¼ teaspoon Celery Seed
- ¼ teaspoon Turmeric
- ¼ teaspoon Ginger, ground
Preparation
- In a large sauce pan bring water, salt, sugar, and spices to a simmer.
- Add vinegar and bring to a boil before adding all vegetables.
- Stir to coat all the vegetables, reduce heat to medium and continue cooking and stir for 5-10 minutes until vegetables are tender.
- Transfer to glass jars and refrigerate.
- Will keep for 2-3 weeks in a refrigerator. Serve with grilled bratwursts on hotdog buns topped with spicy mustard.
