with Praline or Bacon Topping

Sweet Potato Casserole insertOriginally a favorite sweet potato casserole with eggs, sugar, and cinnamon/nutmeg seasonings topped with buttery corn flakes, brown sugar and pecans, this dish can become a savory casserole. Switch out the seasonings with salt and pepper, eliminate the sugars and nuts and top with crumbled bacon.

Ingredients

Praline Version:

  • 2 medium sweet potatoes 1 ½ lbs, cooked and peeled (about 3 cups when mashed) (RFS# 75768)
  • ½ c low fat milk (RFS# 71388)
  • ⅓ c Culinary Secrets® granulated sugar (RFS# 16728)
  • 2 Fair Meadow® eggs (RFS# L3370)
  • 2 Tbsp Silverbrook® butter (RFS# 73400)
  • ½ tsp Culinary Secrets® ground nutmeg (RFS# 24084)
  • ½ tsp Culinary Secrets® ground cinnamon (RFS# 24180)

Praline Topping:

  • 2 Tbsp Silverbrook® butter (RFS# 73400)
  • ¾ c corn flakes (RFS# 25654)
  • ¾ c Katy’s Kitchen® nuts chopped, walnuts (RFS#23044) or pecans (RFS# 23036)
  • ¼ c firmly packed brown sugar (RFS# 27222)

Savory bacon version:

  • 2 medium sweet potatoes 1 ½ lbs, cooked and peeled (about 3 cups when mashed) (RFS# 75768)
  • ½ c low fat milk (RFS# 71388)
  • 2 Fair Meadow® eggs (RFS# L3370)
  • 2 Tbsp Silverbrook® butter (RFS# 73400)
  • ½ tsp Katy’s Kitchen® iodized table salt (RFS# 33202)
  • Culinary Secrets® black pepper to taste (RFS# 24108)

Savory Topping:

  • 6 slices Prairie Creek® bacon fried crisp and crumbled (RFS# 15974)

Preparation

  1. Place potatoes in mixer bowl. Mix at low speed 30 seconds.
  2. Add milk, sugar, eggs, butter, spices. Beat at medium speed for 1 minute.
  3. Spread mix in greased 9 inch pie plate or divide into 6 ramekins.
  4. Bake at 400 for 20 minutes for pie plate or 15 minutes for ramekins.
  5. Stir together the topping ingredients. Spread onto the sweet potato mix.
  6. Bake 10 minutes longer. CCP – Cook to an internal temperature of 165ᵒ F for 15 seconds.
