Shrimp & Waffles with Cajun-Mustard-Maple Glaze

Ingredients

  • 8 oz HIDDEN BAY® Shrimp Breaded Hand Oriental Butterfly 26-30 Clean Tail, Individually Quick Frozen
  • 1 ea Waffle Belgian 2.4 Ounce 4", Frozen
  • 1 oz Tomato Grape Medley, Fresh
  • 1 oz Corn Whole Kernel Grade A, Individually Quick Frozen
  • 1/2 oz Onion Green Scallion Iceless Clean and Trim, Fresh
  • 1/8 oz Seasoning Cajun
  • 1/4 ea Mustard Dijon
  • 1/2 oz Onion Green Scallion Iceless Clean and Trim, Fresh
  • 1 oz Syrup Pancake Maple Flavored

Preparation

  1. Prepare shrimp in deep fryer until golden brown and cooked through.
  2. Toast waffle in sauce pan.
  3. Heat maple syrup, Cajun seasoning and mustard until smooth and blended.
  4. Heat a sauté pan with a touch of butter and add halved tomatoes and corn.
  5. Sear until browned edges — careful not to overcook — and season with salt & pepper.
  6. Add sliced green onions.
  7. Place shrimp on top of waffle and top with tomato/corn mixture.
  8. Drizzle with syrup sauce and serve.
