Penne with Pesto, Goat Cheese, Walnuts and Shrimp

Ingredients

Preparation

  1. In a large saute pan combine the heavy cream and pesto.
  2. Add in the lemon juice and walnuts.
  3. Stir in the shrimp and cook until cooked through.
  4. Season with salt and pepper.
  5. In a large stock pot, bring two qts of water to a boil with the two tsps of salt.
  6. Cook the pasta until al dente.
  7. Add the drained pasta to the pesto sauce and toss to combine.
  8. Adjust the salt and pepper.
  9. Top with small pieces of the goat cheese.
  10. Garnish with grated parmesan cheese.
