Open-Face Corned Beef & Eggs



  1. Preheat griddle or skillet to medium high
  2. Cook, season, then brown potatoes and set to the side
  3. Heat up corned beef, then set aside
  4. Toast the rye bread, the place on plate, top with thousand island dressing, and swiss cheese
  5. Top with corned beef slices, and potatoes, then top with fried eggs
