
Million Dollar Steak Sliders w/ Pickled Red Onions & Cabernet Syrup
Ingredients
Steak Sliders
- 6 ounces Monterey beef tenderloin
- Salt, to taste
- Pepper, to taste
- 3 each white slider buns
- 1.5 ounces Humboldt fog goat cheese
Pickled Red Onions
- 80 ounces red onion, sliced
- 32 ounces white vinegar
- 7 ounces extra-fine sugar
Cabernet Syrup
- 1 cup cabernet wine
- 4 ounces red wine vinegar
- 7 ounces extra-fine sugar
Preparation
Sliders
- Cut Monterey steak into 2 ounce portions. Pound gently to shape. Season with salt and pepper and sear on a hot griddle to medium rare. Top with goat cheese and cover to melt.
- Dredge pickled red onions in seasoned flour and fry to crisp.
- Place steak on grilled bun and top with fried onion. Drizzle with Cabernet syrup.
Pickled Red Onions
- Bring vinegar and sugar to a boil and stir to dissolve. Add onions and simmer about 15 minutes, stirring often.
Cabernet Syrup
- Combine wine, vinegar and sugar in a saucepan and bring to a boil. Simmer on low for about 4-5 minutes until reduced to syrup consistency, making about 1.5 cups.
