
Huevos Rancheros with Chorizo
Ingredients
- 1 pound Eagle Ridge® Pork Chorizo (Item# 40770)
- 1 Good Roots® Avocado
- 1/4 pound crème fraîche
- 2 tablespoons half & half
- 2 1/2 tablespoons lime juice from Good Roots Limes
- 1 teaspoon honey
- 1 teaspoon sriracha sauce
- 2 cups Bountiful Harvest® Black Beans (Item# 15168)
- 1 clove Good Roots garlic
- 1 Good Roots Spanish Onion
- 1/2 teaspoon Paprika
- 1/4 cup Good Roots Cilantro
- 1/4 teaspoon cumin
- 1/2 teaspoon Chile Powder
- 8 San Pablo® Corn Tortillas
Preparation
- Form pork chorizo into small patties and cook in a skillet
- For the Avocado Crema: Combine all ingredients
- For the Black Beans: Soak beans overnight then cook with garlic, Spanish onion, paprika, cumin, Chile powder, cilantro and pork stock until tender
- For the Ranchero Sauce: Combine all ingredients
- Place tortilla on a hot skillet and brush with rendered pork fat. Cook until bubbly and golden then flip
