Huevos Rancheros with Chorizo



  1. Form pork chorizo into small patties and cook in a skillet
  2. For the Avocado Crema: Combine all ingredients
  3. For the Black Beans: Soak beans overnight then cook with garlic, Spanish onion, paprika, cumin, Chile powder, cilantro and pork stock until tender
  4. For the Ranchero Sauce: Combine all ingredients
  5. Place tortilla on a hot skillet and brush with rendered pork fat. Cook until bubbly and golden then flip
