  • 8 oz Ground Beef Patty
  • 1/4 oz Garlic, minced
  • 2 oz Butter
  • 1/8 oz Parsley, chopped
  • 1 tsp Fresh Thyme, chopped
  • 1/2 tsp Fresh Chives, small diced
  • 4 tsp Kosher Salt, Coarse
  • 1 oz Panko Bread Crumb, Japanese Coarse
  • 1 Lemon, zest only
  • 1/2 oz Tomato
  • 1/8 oz Green Leaf Lettuce
  • 1 oz Yellow Onion
  • 2 tsp Oil Olive
  • 1 Soft Pretzel Bun, salted
  • 1 oz Dill Pickle, Kosher Spear


  1. For the Herb Crust: Add together the room temperature butter, chives, garlic, parsley, thyme, panko bread crumbs, 2 tsp. of salt and lemon zest. Mix well and wrap in plastic wrap. let cool until stiff. In a hot sauté pan add the sliced onion and 1 tsp. of salt. cook on medium low heat until they are caramelized and sweet.
  2. Season the burger with the remaining 2 tsp. of kosher salt and cook to the desired degree of doneness.
  3. Toast the pretzel bun on a flat top or in an hot oven. Top the burger off with the caramelized onion and then top with the herb crust. Place under a salamander or in a broiler to melt and color the herb crust. Serve on the pretzel bun and finish off with the tomato, lettuce and pickle.
