Grilled Prime Rib with Gorgonzola-Pistachio Butter
- 16 Oz Beef Prime Rib
- 8 Oz Gorgonzola Cheese, crumble
- 32 Oz Salted Butter
- 4 Oz Raw Pistachios
- 3/8 Oz Sea Salt
- ¼ Oz Black Pepper
- Cook Prime accordingly. Slice off 16 oz and place on grill and mark both sides. Slice off the butter and add to the prime rib. Let the butter melt.
Place pistachios in blender and pulse to crush, leave a few chunks. Reserve. Place all other ingredients in blender and blend until smooth. Add pistachio and mix for a few seconds. Wrap in plastic wrap and refrigerate.
