Gouda On Rye
with Navy Bean & Ham Soup
Pair our Cobblestreet Market® Navy Bean & Ham Soup with a Gouda and Sweet Onion Jam Grilled Cheese using rye bread layered with Cobblestreet Market Sliced Gouda Cheese, 1 oz tangy Red Onion Jam, and grilled to perfection.
Tangy Red Onion Jam
- 1 Tbsp olive oil
- 1 lb red onions, halved and thinly sliced on mandolin
- 1/2 C dry red wine
- 1/4 C light brown sugar
- 1 Tbsp balsamic vinegar
- Kosher salt & ground black pepper to taste
- Heat olive oil in a medium skillet over medium heat until shimmering. Add onions and cook until softened and just translucent, 8 to 10 minutes, stirring occasionally.
- Add in wine, sugar, vinegar, and a dash of kosher salt. Bring to a boil, then reduce heat low, and let simmer until liquid thickens and becomes syrupy, about 1 hour, stirring occasionally. Season with additional salt and pepper to taste. Transfer onion jam to a bowl and let cool, letting onion jam return to room temperature before using.
