CW Lobster Avocado/Jalapeno Toast
- 2 Slices fresh whole grain bread
- 4 - 5 oz of CW KC lobster meat (RFS #12482)
- 2 fresh avocados
- 1 vine ripe tomato, chopped
- ½ cup red onion, diced
- 1 tsp lemon juice
- 2 small fresh jalapenos, sliced thin
- Toast grain bread slices to light brown toast.
- Prepare fresh avocado spread by mixing avocado, chopped tomatoes, diced red onion, and lemon juice. Smash gently and spread on toast.
- Top fresh avocado with CW lobster meat.
- Layer thinly sliced jalapeno over lobster meat.
- Sprinkle with fresh chives and serve
