Chicken with Okra

“This is a very typical dish of Minas Gerais, made with free range chicken with okra.”


  • 1 whole chicken broken down at joints (approx. 2kg)
  • 4 tbsp of oil
  • 1 tbsp plus 1 tsp salt
  • 1 tsp of annatto
  • Pepper to taste
  • 1 tbsp vinegar
  • 4 cloves of garlic, finely minced
  • 1 fresh bell pepper
  • Hot water
  • Scallion to garnish


  1. Season the chicken with all of the seasonings
  2. Let marinate for around 2 hours
  3. Heat the oil in a thick pan and fry the chicken
  4. Keep heat at medium with the lid on until it begins to sizzle
  5. Start to slowly add water until the chicken is soft
  6. Garnish with chopped scallion

You can serve it with some corn angu, which is a type of polenta.
