
Chicken with Okra
“This is a very typical dish of Minas Gerais, made with free range chicken with okra.”
Ingredients
- 1 whole chicken broken down at joints (approx. 2kg)
- 4 tbsp of oil
- 1 tbsp plus 1 tsp salt
- 1 tsp of annatto
- Pepper to taste
- 1 tbsp vinegar
- 4 cloves of garlic, finely minced
- 1 fresh bell pepper
- Hot water
- Scallion to garnish
Preparation
- Season the chicken with all of the seasonings
- Let marinate for around 2 hours
- Heat the oil in a thick pan and fry the chicken
- Keep heat at medium with the lid on until it begins to sizzle
- Start to slowly add water until the chicken is soft
- Garnish with chopped scallion
You can serve it with some corn angu, which is a type of polenta.
