
Cheddar Scallion Cornbread

Ingredients
- 4 oz. unsalted butter
- 2/3 cup Light brown sugar
- 2 each Eggs
- 1 cup Buttermilk
- 1/2 tsp Baking soda
- 1 cup yellow cornmeal
- 1 cup A/P flour
- 1 tsp. Salt
- 8 oz. Chedddar cheese
- 4 oz. Sliced Green onion
Preparation
- Preheat oven to 375 and grease an 8 inch pan
- Mix melted butter into the sugar and add the eggs and buttermilk, mix thoroughly with a whisk
- Sift the flour together with the baking soda then mix the cornmeal into this. Add the wet ingredients to the dry and mix together with a spoon.
- Fold in the grated cheddar cheese and sliced scallions, then pour into greased pan and bake for 35-40 minutes.
