Cheddar Scallion Cornbread

Ingredients

  • 4 oz. unsalted butter
  • 2/3 cup Light brown sugar
  • 2 each Eggs
  • 1 cup Buttermilk
  • 1/2 tsp Baking soda
  • 1 cup yellow cornmeal
  • 1 cup A/P flour
  • 1 tsp. Salt
  • 8 oz. Chedddar cheese
  • 4 oz. Sliced Green onion

Preparation

  1. Preheat oven to 375 and grease an 8 inch pan
  2. Mix melted butter into the sugar and add the eggs and buttermilk, mix thoroughly with a whisk
  3. Sift the flour together with the baking soda then mix the cornmeal into this. Add the wet ingredients to the dry and mix together with a spoon.
  4. Fold in the grated cheddar cheese and sliced scallions, then pour into greased pan and bake for 35-40 minutes.
