
Cajun Mahi Tostadas with Old Bay Aioli
Ingredients
- 3 - 2/4 oz. HIDDEN BAY® Mahi Portions (#11474)
- 4 tostada shells

- 1 ear fresh corn, cooked and cut off the cob
- green cabbage, shredded
- red onion, diced
- green onion, sliced
- fresh cilantro, chopped
- old bay aioli

- 2 tbsp fresh lemon juice
- 1 large egg yolk
- 1 clove garlic, minced
- 1 1/4 tsp Old Bay Seasoning
- 1 cup canola oil
- salt to taste
Preparation
- To cook the mahi, preheat a lightly oiled skillet to medium heat. Season the fish with cajun seasoning on both sides. Cook until fish flakes easily with a fork, about 3-4 minutes per side.
- To make the Old Bay Aioli, pulse the lemon juice, egg yolk, garlic, Old Bay and 1/4 cup of cold water in a food processor until combined. With the machine on, slowly drizzle in the oil until the aioli is emulsified, about 2 minutes. Season the Old Bay aioli with salt to taste.
- To assemble tostadas, top shells with cabbage, followed by 1/2 mahi portion per tostada, corn and red onion. Drizzle with the aioli and garnish with cilantro and green onion.
