Cajun Mahi Tostadas with Old Bay Aioli


  • 3 - 2/4 oz. HIDDEN BAY® Mahi Portions (#11474)
  • 4 tostada shells
  • cajun seasoning
  • 1 ear fresh corn, cooked and cut off the cob
  • green cabbage, shredded
  • red onion, diced
  • green onion, sliced
  • fresh cilantro, chopped
  • old bay aioli

  • 2 tbsp fresh lemon juice
  • 1 large egg yolk
  • 1 clove garlic, minced
  • 1 1/4 tsp Old Bay Seasoning
  • 1 cup canola oil
  • salt to taste


  1. To cook the mahi, preheat a lightly oiled skillet to medium heat. Season the fish with cajun seasoning on both sides. Cook until fish flakes easily with a fork, about 3-4 minutes per side.
  2. To make the Old Bay Aioli, pulse the lemon juice, egg yolk, garlic, Old Bay and 1/4 cup of cold water in a food processor until combined. With the machine on, slowly drizzle in the oil until the aioli is emulsified, about 2 minutes. Season the Old Bay aioli with salt to taste.
  3. To assemble tostadas, top shells with cabbage, followed by 1/2 mahi portion per tostada, corn and red onion. Drizzle with the aioli and garnish with cilantro and green onion.
