INGREDIENTS

  • 3 slices Slab bacon, chopped
  • 3 slices Salted pork, chopped
  • 2 links Andouille sausage, coin sliced
  • 1 Onion, chopped small
  • 2 tsp Creole seasoning
  • 1 ½ C Ketchup
  • ¼ C Molasses
  • ¼ C Brown sugar
  • 2 Tbsp Apple cider vinegar
  • 2 Tbsp Mustard
  • 2 ½ Tbsp Worcestershire sauce
  • 1 Tbsp Ham base
  • ¼ tsp Fine black pepper
  • 1 oz Louisiana tabasco sauce
  • 3 ½ C Red beans - soaked
  • 4 ½ C Water

PREPARATION

Sauté bacon, pork and sausage in a cast iron Dutch oven to render the fat. Remove and set meat aside. Add the remaining ingredients (except beans) to Dutch oven and cook for 2 minutes. Add beans and 4½ C water and bring to a boil. Then simmer for 80 minutes. Stir occasionally and add water, if needed. Pre­heat oven to 375˚F. Place the mixture in the oven without a lid for 45 minutes or until beans thicken. Add sausage back in. Place rice on plate and serve beans and sausage on top. Garnish with greens, serve with bread.
