Blackended Sweet Potato Fries

Ingredients

  • 1 lb. Sweet Potatoes, Peeled
  • 1/2 oz. Seasoning, Cajun, Blackened

Preparation

  1. Cut whole sweet potatoes with Fry cutter, 1/2 in., Blanch in 250 degree oil for 6 minutes, drain and reserve for service.
  2. To order, fry already blanched Fries for 4 minutes in 350 degree oil.
  3. Sprinkle and toss with Cajun Blackened Seasoning
