Blackended Sweet Potato Fries

- 1 lb. Sweet Potatoes, Peeled
- 1/2 oz. Seasoning, Cajun, Blackened
- Cut whole sweet potatoes with Fry cutter, 1/2 in., Blanch in 250 degree oil for 6 minutes, drain and reserve for service.
- To order, fry already blanched Fries for 4 minutes in 350 degree oil.
- Sprinkle and toss with Cajun Blackened Seasoning
