Beet & Cherry Toast



  1. In a bowl, mix together ricotta, lemon zest, and olive oil until smooth and well integrated. Season to taste with salt and black pepper.
  2. Place basil and salt on cutting board and chop.
  3. Mix beets and cherries together with lemon juice, basil and salt and let sit.
  4. Place olive oil on Brioche bread and toast.
  5. Spread ricotta on bread and top with beet and cherry mix.
