Beet & Cherry Toast
- 4 oz Brioche Bread Loaf
- 8 oz Ricotta Cheese
- 1/2 ea Lemon
- 1/4 oz Extra Virgin Oil Olive
- 3/4 oz Basil
- 1 /8 oz Coarse Salt
- 4 oz Red Cherry, Tart, Pitted
- 4 oz Beet, Diced
- In a bowl, mix together ricotta, lemon zest, and olive oil until smooth and well integrated. Season to taste with salt and black pepper.
- Place basil and salt on cutting board and chop.
- Mix beets and cherries together with lemon juice, basil and salt and let sit.
- Place olive oil on Brioche bread and toast.
- Spread ricotta on bread and top with beet and cherry mix.
