Ingredients

  • 6 ea 2-oz Meatballs
  • 1 1/2 lb Beef Ground Bulk 80/20 Fine, Refrigerated
  • 1/2 lb Bacon Single Slice 14-17 Applewood Smoked, Refrigerated
  • 8 oz Onion Yellow Jumbo Bag Fresh, Minced
  • 2 Tbsp Garlic Whole Peeled Reclosable Bag 100-130 Cnt/Pound Fresh, Minced
  • 1/2 C Milk 2% White Plastic, Refrigerated
  • 3/4 C Bread Crumb Italian Flavor
  • 2 ea Egg Shell-On White Large Grade A, Loose Pack, Refrigerated
  • 2 Tbsp Salt Coarse Kosher
  • 1 tsp Pepper Black Coarse Grind 12 Mesh
  • 1 1/2 tsp Pepper Red, Crushed
  • 1/4 C Cheese Parmesan, Grated Dry
  • 1/2 C Parsley Italian Fresh, Chopped
  • 8 oz Cheese Cheddar Yellow Sharp Shredded Feather, Refrigerated
  • 1 SERVING SUB-RECIPE: Garlic Chile Ketchup, 2 oz per serving
  • 1 C Ketchup Fancy 33% (Z)
  • 3/4 C Sugar Brown Dark
  • 1/4 C Sauce Chili Hot Sriracha Squeeze

  • 1 SERVING SUB-RECIPE: Hot Mustard Aioli, 2 oz per serving
  • 2/3 C Mayonnaise Extra Heavy Duty Creamy
  • 1 Tbsp Mustard Dijon Extra Strong
  • 2 tsp Mustard Dry Powdered
  • 1 tsp Honey Extra Light Amber Grade A, 51% Domestic
  • 1 Tbsp Juice Lemon 100%, Plastic Bottle
  • 1/2 tsp Pepper Cayenne Red, Ground
  • 1 1/2 oz Relish Pickle Sweet Plastic
  • 1 oz Lettuce Green Leaf Clean and Trim Cello, Fresh
  • 6 ea Pick Bamboo 4.5" Knotted

Preparation

  1. Preheat oven to 400 degrees F.
  2. Place 6 cheeseburger bites on a small baking pan. Bake for 12 minutes.
  3. Remove from oven. Brush on all sides with garlic chile ketchup.
  4. Return to oven. Cook for 5 additional minutes.
  5. Brush again with garlic chile ketchup.
  6. Arrange leaf lettuce on the base of a plate.
  7. Place cheeseburger bites on top of the lettuce.
  8. Top each bite with a small dollop of relish.
  9. Skewer each bite with a knotted bamboo pick.
  10. Serve with spicy mustard aioli on the side in a ramekin.
