Arugula Farro Salad with Citrus Salmon



  1. Prep: Cook farro, water and salt together over high heat until boil, then simmer for almost 30 minutes. Reserve.
  2. Combine the oil, vinegar, vegetables, and the Faro including the arugula. Salt and pepper to taste. Salt and pepper the (skin side first) salmon filet. Sear in pan with the 1 Tbsp of olive oil to medium rare. In center of the plate position a round ring mold (6 inch) and place farro on plate. Place salmon on top and garnish with the fruit zests.
