Using Her Power for the Greater Good
As culinary operations director for the award-winning One Off Hospitality restaurant group, Kim Leali seeks to influence the next generation of leaders.
“My job is to help bring out the best in every chef, the sous chefs, the team and all the cooks,” explains Kim Leali, the culinary operations director for One Off Hospitality in Chicago. “I like to really just listen to what people are trying to do and what they’re trying to achieve and help them get there. Whether or not it’s professionally, whether or not it’s creatively, or whether or not it’s personally, I am there as a coach and a mentor.”
Leali, who’s been in her current role with the award-winning restaurant group for four years, has had an unusual path to the culinary world. An unsatisfying career as a mortgage broker led her to launch an in-home catering business during evenings and weekends. She then honed and polished her skills in culinary school, which eventually landed her a gig as a line cook with One Off Hospitality’s Publican restaurant.
As culinary operations director, Leali seeks to influence the next generation of culinary leaders—particularly female leaders.
“I wish to see more female leadership coming up in this industry as a whole,” Leali tells us during her episode of the #restaurantinc podcast. “There are eight female leaders in the kitchen throughout One Off Hospitality, and it is my goal to continue to nurture them, mentor them and help them become the next chefs de cuisine and be really great at their jobs and learn how to manage their teams . … and balancing being creative and the financial aspects, too.”
