How one chef finds inspiration along the bike trail
Lettuce chef partner Mychael Bonner discusses his colorful culinary journey on the #restaurantinc podcast.
Mychael Bonner has been in the hospitality industry for almost 30 years. Along the way, he’s collected quite the adventures, which he shares with us during this podcast episode of #restaurantinc.
During his impressive hospitality career, he’s served in many roles, most notably as vice president of culinary for 36 Maggiano’s restaurants across the country and his current position at Lettuce Entertain You Enterprises. He’s chef partner over four restaurants in the group: Petterino’s, Saranello’s, Di Pescara and The Ivy Room at Tree Studios.
As with many restaurant veterans after they reach the age of 40, Bonner started taking a serious look at his lifestyle and how it affected his health. Facing hypertension, he took up cycling to decrease his blood pressure. But cycling turned into more than just an exercise routine, he says. It also helped his mental health and allowed him to “re-center and work through issues,” he continues. We discuss that and more.
