Beer, Bacon Jam and Gouda Arancini

----- INGREDIENTS -----

For the Beer Risotto:

  • ½ lb Butter or Bacon Fat
  • 10 Garlic Cloves, minced
  • 2 ea. Small Yellow Onions, diced
  • 4 cups Arborio Rice
  • 2 bottles of Pilsner or Brown Ale
  • 2 quarts Chicken Stock
  • 2 cups Gouda Cheese, shredded
  • 1 cup Parsley, chopped
  • Salt and Pepper

For the Bacon Jam:

  • 5 lbs bacon, diced
  • 1 Yellow Onion, diced
  • 10 ea. Garlic Cloves, minced
  • 1 cup Brewed Coffee
  • ¼ cup Maple Syrup
  • 2 Tbsp. Whole Grain Mustard
  • 1 cup Brown Sugar

For the Gouda filling:

  • 50 ea. Small Cubes of Gouda Cheese

Breading Station:

  • 4 cups Seasoned Breadcrumbs
  • 4 ea. Eggs
----- PREPARATION -----

For the Beer Risotto:

  1. Melt butter or bacon fat in large saucepan.
  2. Add garlic and onions and cook until onions are translucent.
  3. Add 4 cups of Arborio rice and lightly toast.
  4. Add 2 bottles of beer and let liquid cook down until almost gone.
  5. Keep adding chicken stock, 2 cups at a time. When liquid dissolves in your pan, add more stock until the rice is creamy and tender. About 40-45 min.
  6. Remove pan from heat and add Gouda and parsley.
  7. Spread out on a sheet pan and cool completely.

For the Bacon Jam:

  1. Sautee diced bacon in large sauté pan until crispy.
  2. Remove excess oil from pan and leave a few tablespoons.
  3. Add onion and garlic and cook until onion is translucent.
  4. Add coffee, maple syrup, mustard and brown sugar.
  5. Cook on reduced heat for 45 minutes or until ingredients have become the consistency of chunky jam.

For the Arancini Assembly:

  1. Scoop 2 Tbsp. beer risotto from the sheet pan.
  2. Flatten like a pancake and place a bit of bacon jam in the center.
  3. Place a piece of Gouda cheese in the center of the bacon jam.
  4. Roll into a ball.
  5. Dip ball into egg mixture and then roll in breadcrumbs.
  6. Place in refrigerator to cool.
  7. Fry at 350 degrees in deep fryer until golden brown and heated through 3-5 min.
