
Banana Cream Cheese Walnut Cake with Bacon and Key Lime whipped cream and Candied Sweet Potato
----- INGREDIENTS -----For the Cake:
- 4 ea. Ripened Black Bananas
- 1 cup Cream Cheese
- 2 ea. Large Eggs
- 4 cups Flour
- 2 cups Sugar
- 2 cups Milk
- 1 Tbsp. Baking Powder
For the Whipped Cream:
- 1 pt. Heavy Cream
- 1 tsp. Cream of Tartar
- 2 Tbsp. Bacon Fat, softened
- 1 Tbsp. Key Lime
- ¼ cup Powdered sugar
For the Candied Sweet Potato:
- 1 cup Sweet Potato, julienned
- 1 ½ cup Sugar
- 1 cup Water
For the Cake:
- Preheat oven to 350 degrees. In a mixer with paddle attachment, add banana, sugar, eggs, cream cheese and beat until smooth. Add walnuts, baking powder, and flour and mix until blended.
- Pour batter into a 2-inch cake pan. Bake until a toothpick can be stuck in the middle and comes out clean (about 15 min).
For the Whipped Cream:
- In a mixer with a whip attachment, add all ingredients and whip until thick and smooth. Do not over whip or it will turn into butter.
For the Candied Sweet Potato:
- In a pot, combine 1 cup of sugar with water and bring to boil. Bring down to a simmer and add sweet potato. Cook until the sweet potato is tender. Not long, about 5 min.
- Strain sweet potato. Toss the sweet potato in the remaining sugar and let sit in a still oven or under a heat lamp until crunchy. Assemble as desired.
