
Arugula Farro Salad with Citrus Salmon
Ingredients
- 3 oz Arugula
- ½ Ea Red Sweet Onion Chopped
- ½ Ea Pound Chopped Tomato
- 1 Ea Clove Garlic
- ¼ C Balsamic Vinegar
- 1 C + 1 Tbsp Olive Oil
- 3 Tbsp Chopped Chives
- Zest 1 Lemon
- Zest 1 Lime
- Zest 1 Orange
- 1 Ea 6-8 Oz. Portion Of Atlantic Salmon
- 1 ½ C Farro
- 4 C Water
- 1 tsp Salt
Preparation
- Prep: Cook farro, water and salt together over high heat until boil, then simmer for almost 30 minutes. Reserve.
- Combine the oil, vinegar, vegetables, and the Faro including the arugula. Salt and pepper to taste. Salt and pepper the (skin side first) salmon filet. Sear in pan with the 1 Tbsp of olive oil to medium rare. In center of the plate position a round ring mold (6 inch) and place farro on plate. Place salmon on top and garnish with the fruit zests.
