Surimi Ceviche

Ingredients

  • 3 c Hidden Bay Flake and Chunk Surimi
  • ¾ c red onion, diced
  • ½ c cilantro, chopped
  • ¼ c jalapeno, diced small
  • 2 c roma tomatoes
  • ¼ c olive oil
  • ½ c lime juice
  • 1 tsp ground cumin
  • 1 tsp ground chipotle pepper
  • 2 c guacamole

Preparation

Combine surimi with all ingredients except guacamole. Place in an air-tight container and store in the refrigerator for at least 4 hours. Serve surimi over guacamole with chips.
