Aloha Haddock and Chips
- 6 c peele and chopped pineapple
- 1 1/2 c chopped red onion
- 1/2 c jalapeno jam
- 1 1/2 English cucumbers, diced
- 3 Fresno peppers, minced
- 6 tbsp rice vinegar
- Kosher salt and freshly ground black pepper
- 3 lb French fires, cooked
- 24 Hidden Bay 2 oz beer battered haddock, cooked
- Micro basil
- Hawaiin black salt
- Combine pineapple, onion, jam, cucumber, Fresnopepper, rice vinegar and season.
- Serve with fries and 2 pieces of haddock, sprinkled with black salt.
