Aloha Haddock and Chips

Ingredients

  • 6 c peele and chopped pineapple
  • 1 1/2 c chopped red onion
  • 1/2 c jalapeno jam
  • 1 1/2 English cucumbers, diced
  • 3 Fresno peppers, minced
  • 6 tbsp rice vinegar
  • Kosher salt and freshly ground black pepper
  • 3 lb French fires, cooked
  • 24 Hidden Bay 2 oz beer battered haddock, cooked
  • Micro basil
  • Hawaiin black salt

Preparation

  1. Combine pineapple, onion, jam, cucumber, Fresnopepper, rice vinegar and season.
  2. Serve with fries and 2 pieces of haddock, sprinkled with black salt.
