Lemon Shrimp Scampi
- 12 large shrimp, peeled and cleaned
- 1 Tbsp. pesto sauce
- 1 Tbsp. lemon juice
- 1 lemon, sliced and grilled Micro basil, to garnish (optional)
- Toss shrimp with pesto and lemon juice. Arrange in small cast iron skillet and cook until pink and starting to brown (use broiler for top browning).
- Garnish with grilled lemons and micro basil; serve hot.
