Throughout winter in most parts of the country, we want to do everything to stay warm and that includes eating comfort food and enjoying robust cocktails crafted with darker spirits like bourbon or aged rum, hearty spices like allspice and winter citrus. But come spring, it's time to lighten things up. By using lighter spirits like gin, vodka and agave (i.e., tequila and mezcal) with fresh spring produce, your cocktail list can start thawing out and shedding layers just like your customers.
